Chandernagor (Chai) Pancakes 2 cups flour
3 tablespoons sugar
1 tablespoon baking powder
½ teaspoon salt
2 cups buttermilk
3 eggs (large), separated
1 ½ teaspoons vanilla extract
2 tablespoons Chandernagor (chai tea) – ground

Whisk together flour, 2 tablespoons sugar, baking powder and salt. Add buttermilk, egg yolks and vanilla – whisk until smooth, thick batter. Beat (electric mixer) egg whites to a soft peak – add 1 tablespoon sugar and beat until stiff. Fold egg whites into batter first, then fold in the ground tea Spray griddle with cooking spray and cook over medium-low heat 2-3 minutes per side. Serve with yoghurt and granola topping.
